Soft Ginger Cookies

Enriched with warm spices like cinnamon and cloves, the peppery aroma of ginger, and lots of love, these soft ginger cookies will undoubtedly become one of our favorite holiday traditions, filling the house with fragrance and reminding us how much sweetness can be found in simple, homemade creations. Share with your loved ones these cookies with or without icing! Each bite is a festive burst of flavor and smells like... Christmas!!!

Ingredients

  • 180 g butter, at room temperature
  • 180 g brown sugar
  • 1 egg, at room temperature
  • 70 g molasses
  • 1 tbsp water
  • 300 g of all - purpose flour
  • 4 tsp of ginger powder
  • 2 tsp cinnamon powder
  • 1 tsp cloves powder
  • 1 tsp soda


  • Brown sugar and cinnamon for rolling


For icing (optional):

  • 2 large cups of powdered sugar
  • Milk
  • 1 vial or 1/2 - 1 sachet of vanillin


How to

  1. In a mixer's bowl, beat the butter and sugar until fluffy.
  2. Add the egg and after mixing the water and molasses, add them to the mixer bowl.
  3. Sift the flour and incorporate the ginger, cinnamon, cloves and baking soda.
  4. Add them to your mixture and continue beating until the ingredients are combined.
  5. Wrap the mixture in plastic wrap and refrigerate for about an hour.
  6. In a bowl, combine brown sugar and cinnamon.
  7. Shape 30 g balls, roll them in the sugar and cinnamon and place them at a distance on a baking tray lined with parchment paper.
  8. Bake in a preheated oven (set to fan) at 350 °F - 175 °C for 10 min to result in soft cookies and let them cool on a wire rack.
  9. Mix the icing sugar and vanillin and add as much milk as needed (start with 1-2 tsp and check) to achieve a thick icing.
  10. Decorate your cookies, letting your imagination create!

Note from Greek jar:

Due to their moist and tender nature, these cookies tend to soften over the days. If they are not going to be eaten within 1-2 days, it is advisable to put them in an airtight container and store them in the refrigerator. That way, they will remain delicious down to the last ... crumb!

Our mixture will be quite soft before it goes into the fridge. It shouldn't give us any trouble!

As you shape the balls, you may need to wash your hands a few times to clean up the dough debris and make the process easier.

The amount of icing is indicative for one layer of icing. You may need to make more depending on the layers you prefer and the decorations you're making on your cookies!

When you take the cookies out of the oven, it would be best to wait a while so that they set somewhat and you can safely transfer them to the rack without ruining them.

They are just as delicious without the icing!!!
